Recipe: texas ranch-style fajitas

Texas Ranch-Style Fajitas

4 pounds skirt steak, or, if unavailable, flank steak
Juice of 8 to 12 Mexican limes
2 cloves garlic, chopped
2 onions, sliced
2 serrano chile peppers, minced
1 handful fresh coriander, stems removed and leaves chopped
Salt to taste

Trim off the excess fat from the meat and remove the muscle fiber. Each fajita should be 1/2 to 3/4 inch thick in order to cook evenly. If using flank steak, cook it whole and slice against the grain in narrow strips not more than 1/2 inch thick.

Place one layer of fajitas in the bottom of a large glass roasting pan. Pour the lime juice over it. Add some of the garlic, onion, serrano peppers and coriander. Add another layer of meat, and continue until all ingredients have been used. Pour enough beer over the fajitas to fill the pan halfway. Cover with plastic wrap and marinate in the refrigerate for 6 hours, basting occasionally.

Build a fire in your grill and let it burn until the coals are extremely hot but not flaming. Lay the meat across the grill. Turn the meat only once as it cooks. When done, remove the meat from the grill and salt to taste.

Serves 6 to 8.

Most people think of Orlando and think of Disney World or Universal Studios. And a trip to these attractions makes a wonderful vacation experience. Where Does A Single Man Stay In Bangkok?

You have quite a few different options as to where you stay in Bangkok. You just need to figure out what is best for you.

Finding a place to stay in Bangkok is easy. Finding a place to stay that suits your needs can be a different story.

This is geared primarily to the single man looking to have a bit of fun in Bangkok. And it is for the short term stay.

If all you have is a few hours to a half day in Bangkok, I recommend that you just get a room near the Suvarnabhumi airport. If you don’t know where you are going, getting from the airport to the main part of the city can take anywhere from 1 to 3 hours depending on traffic. If you are just in Bangkok on a short layover, stay near the airport.

If you have a day or two, you have many more options. It all depends on what you want to do.

For the first timer, I would recommend staying near Patpong Road, Soi Nana, or Soi Cowboy. These are three of the main night venues for the single man on the prowl. They all have advantages and disadvantages.

Patpong was the place to go during the Vietnam War and for quite a few years after. Now it is a tourist trap with a capital “T”. But, for the first time visitor, it is still worth seeing. Just don’t buy anything from the street vendors. Getting to Patpong at about 5 PM you can see how much work it is to set up this street market and how fast they get it going.

Soi Nana or Soi 4 is home to the Nana Entertainment Plaza (NEP). This is a three story, horseshoe shaped, neon lit, den of debauchery. Lots of go-go bars and some beer bars on the first floor for your drinking pleasure. Be careful of the transvestite bar on the second floor. A few years back, this was a great place for the local expats, but with the Internet, this is now a tourist destination. Hang out at the Nana Hotel parking lot across the street at closing time for a sight you will not see anywhere else in the world.

Soi Cowboy is still primarily for the expats. This is a small side street between Soi 21 and Soi 23 off of Sukhumvit Road. It is bar after bar after bar. Lots of hawkers and “hello’ girls trying to get you inside. Most of the bars are go-go’s and prices are lower than Patpong or Nana Plaza. Well worth a visit and a short cab ride from Soi 4.

There are other areas to get your hotel but I try to find a hotel near an area I plan to hang out in. I usually get a hotel near Soi 4 and this gives me easy access to NEP and also to Soi Cowboy. There is also a three-story, beer bar complex on Soi 1 where I like to hang out. I try to avoid spending time in taxis on the Bangkok streets.

If you are still undecided, get your hotel room on Sukhumvit between Sois 3 and 24 and you will be close to the action and short cab rides to anywhere else. You can walk to many of the shopping venues or catch the overhead train to get around.

Patpong – Nightlife Entertainment in Bangkok

Patpong is renowned for its go-go bars, discos and late night “constellations. ” Despite it’s somewhat unsavory reputation, it’s remarkably safe to visit – though it’s as well to stick to the downstairs bars, as some of the upper floor establishments have been known to overcharge. Soi Patpong 1 has a few go go bars but is mainly a shopping street where foreign couples shop and drink. Soi Patpong 2 has numerous smaller beer bars (ba bia in Thai), as well as a row of karaoke establishments and the most popular restaurants on the strip. Soi Patpong 3, an unassuming dead-end lane, is more of a gay venue. The strip comes alive in the early evening, but with the exception of a handful of constellations is more-or-less closed down by 1am. Although sex is for sale in Patpong, the area is much more than just a red light area, being frequented by young Thais and foreign visitors who dance, talk and dine into the small hours.

Believe it or not, there is only one place in
Aspen where you can scoot a boot across the
dance floor to the sounds of George Strait, and
other Country & Western favorites – Shooter’s
Salon. Shooter’s Salon is located on South
Galena Street, and they are open from 6:30pm
to 2am every day, and again, this club has the
distinction of being the only Country & Western
club in the whole town of Aspen, Colorado.

Here, cowboy hats, creased jeans, and boots
are the expected attire. During the week, the
music is provided by a DJ, and on weekends
live bands provide the tunes. If you don’t know
how to do the Texas Two-Step, you can learn
how on any Thursday night which is when
Shooter’s offers free Country dance lessons.

Good beer, good music, great dancing, friendly
games of pool or darts – Shooter’s is a place
where all cowboy’s and cowgirl’s will feel right
at home. If you want to let your hair down,
without having to worry about breaking any of
the rules set by ‘polite society’ in the other fine
establishments located in Aspen, Shooter’s is
the place to do it!

Can You Really Retire in Thailand On $500 Per Month?

When many people retire, they just stop working and continue to live where they currently are. This is not for me. I live in Hawaii and have been here for 23 years and love the islands, but I don’t want to retire here.

The cost of living in Hawaii is not conducive to retirement living unless you have a ton of money. I have a nice nest egg, a pension coming and a military retirement, but I don’t want to struggle with day to day living in Hawaii.

I prefer to live in a country where it will take about 25% of what it costs me now to live. That place is Thailand.

I have been stationed there as a soldier, participated in military exercises there, and take two or three vacations in Thailand every year. It is my personal paradise and where I will spend my golden years.

If you have ever visited Thailand and been to Bangkok, Pattaya, or Phuket, you will think I am crazy saying that you can retire for $550 per month. But, keep in mind that living in Thailand permanently is different than being there for a two or three week vacation.

During a vacation you tend to spend all of the money that you saved up over the year and have a great, blow-out holiday. If you live in Thailand, you won’t be going out bar-hopping and just throwing your money around like you do on vacation. Plus, if you live in a place, you tend to know the places to get the best deals and prices.

As I’ve gotten older and have a lady that I see in Thailand, I don’t have the need to go out as much. We still go out for dinners and shopping and site-seeing, but I spend a lot less than when I am in Pattaya on a single man’s holiday.

My last trip I spent three weeks in Khon Kaen, northeast of Bangkok. My hotel room was basic and cost about 12 dollars per day. My lady would cook breakfast for me and then pick up some goodies from the local street vendors for my lunch. We would go out for dinner and have three or four plates of food, a couple of beers, and some water.

My daily expense for this was about $25. This is for meals and my room. Granted, I spent a little more when we went out shopping and I also saved a bit by drinking beer in my room instead of bar-hopping. Movies were bought at the mall for $3 and watching a movie in the room, drinking a beer, and having a pizza was cheap entertainment.

Once I retire in Thailand, I will buy a house, so the hotel bill is gone. My soon-to-be wife will be able to cook for us in the house and we won’t go out for meals as much. We will still go out, but it won’t be every night.

Even if you don’t own a house, getting a monthly rental in a city away from the touristy areas will still be cheap. Getting by on less than $20 a day is easy unless you are out in the bars and clubs every night.

I recommend that you visit Thailand and see what this beautiful country has to offer and see if it is the right place for you to retire.

Make Your Own Podcast: Finding Your Topic

If you’ve listened to a few podcasts you may have been struck with the idea, “Hey, I’ll bet I could do that! ” Doing your own podcast isn’t hard, but where some people get stuck is right at the very beginning…

“What should my podcast be about?”

There are two ways people usually go about choosing a topic. The first way is to choose something you really love — something you’re very passionate about. This can make a podcast that’s really enjoyable to create as well as to listen to. The problem comes in when you decide that it might be a great idea to make some money with your podcast (whether to help pay for hosting or to use for pizza) and you find out the topic you’ve chosen is too small to really make any money.

The other way to choose a topic is to go to the other end of the spectrum, and to do some research on niches that make a lot of money. Some of the obvious topics are health, golf, mortgages, etc. There’s money to be made in those niches. But there’s a problem with deciding to do a podcast on mortgages if you’re just in it for the money…

…after a few episodes you’re likely to experience what’s known in the industry as “podfade” — that’s when a podcast just… kind… of… goes… away.

Because even if the niche has the potential to make a lot of money, if it’s not something you’re interested in, it’ll become a drag to create another episode.

So the best way to choose a topic is to go somewhere in the middle. Find a topic you’re interested in, but which also has the potential to make some money. (Note: In just about any topic there’s usually ways to monetize a podcast, but here I’m talking about the easiest and most sure route).

Let’s say you really love collecting root beer bottle caps — it’s your passionate hobby. Starting a podcast with that theme is probably not the best idea — at least, not if you want a good chance at monetizing your podcast in the future.

Instead, move more toward the middle of the road and maybe do a podcast for collectors of all kinds. Even though you collect root beer bottle caps and someone else collects agates, you both have a common passion — collecting. You can now do a podcast that will appeal to collectors of all types — you’ve broadened your market tremendously.

And on the other end of the scale, if you’re starting your own podcast to monetize it right off the bat, choose a topic with money-making potential, but that is also of interest to you. For example, if you like to work around the house you could do a podcast about home improvement. And people who repair their homes are sometimes interested in home mortgages, so there’s a way you can tie that big “money-maker” niche into a niche about which you’re really passionate.

There’s nothing wrong with starting a podcast that you never monetize — a lot of people get into podcasting for the sheer fun of it and to connect with others who have similar interests. But if you are going to want to monetize your podcast, the time to think about that is at the very beginning, when you’re just getting started.
