German Pork Stew

INGREDIENTS:
2 yellow onions
1 tbsp butter
1 (14 1/2 oz. ) can sauerkraut
1/4 cup water
1 tsp cumin
4 thick slices Canadian bacon,about 1 lb.
3 tbsp parsley finely chopped
PREPARATION:
Peel onion. Cut into wedges. In a skillet, melt butter. Add onion. Saute, stirring, over medium heat until soft and lightly browned. Transfer onion to a heavy pan. Add sauerkraut, water and cumin. Bring to a boil. Cover. Cook over medium-high heat for about 10 minutes. In a skillet, quickly brown Canadian bacon. Transfer to pan with sauerkraut. Bring to a boil again. Cook, covered, for another 6 to 8 minutes or until heated through. Sprinkle with parsley. Serve immediately.
Served with: Boiled potatoes, mustard or horseradish, bread, beer or other beverage of your choice.
