Italian food varies greatly throughout Italy and pairing down Italian food to just the fifteen or so dishes that can be found at Italian food restaurants in the United States is very short sighted. There are many different regional cuisines in Italy that take their cues from surrounding countries and mix in a little local creativity in order to produce their own unique Italian food. One great example of this is the Friuli-Venezia Giulia region.

This region shares a border with the former Yugoslavia and shares a lot of the same traditions, including culinary traditions. The Italian food here is strong with Austrian, Hungarian, Slovenian, and Croatian influences. One of places that this is most apparent is in the beer halls of the area. Here they feature such dishes as Viennese sausage and goulash. Goulash, which originated as a Hungarian dish, has taken on a distinct Italian taste here and can often be found in fine Italian food restaurants both in and out of Italy. Goulash is immensely popular in this region and is a thick stew of beef and local vegetables such as onions and red peppers. It is very thick and seasoned with paprika and can be served with pasta. Another dish that makes a frequent appearance at the beer halls in this area is Bohemian hare.

The most often used meat in this area is pork. In fact, if visiting this area it is essential to try one of their world famous San Daniele del Friuli hams. These hams are a staple of the local Italian food. The whole region is known for their bacon and sausages. In fact there is a local dish called jota that is unique to the region and is a stew dish made with beans and bacon. The pork in this area is spicy and this may come as a bit of a shock to foreigners not familiar with this brand of Italian food. The pork is often cooked over an open hearth and is seen in many dishes even if it is not the main entrée.

There are many other foods specific to the area. The sweeter side of the Italian food here includes strudel. Most of the desserts here are flour based and so strudel is very common. One of the most common dishes found in the area is polenta. This is a dish of boiled cornmeal and is a staple of the regional diet and can be found served with all types of Italian food including both meat and cheese dishes. It is most similar to American grits. Another Italian food staple that must be mentioned in this region is the cheese. The world famous Montasio cheese comes from this region. If you like your Italian food with lots of cheese, and not just mozzarella, than this is the region for you. One last dish that must be mentioned is brovada. This is a dish that is unique to the region. It is most simply turnips that are preserved in marc. This most certainly is not a dish that most people think of when thinking about Italian food, but it is a dish that is unique to Italy and is therefore an important part of Italian food. Try using latex or plastic gloves instead of cloth gardening gloves. Cloth gardening gloves do not block moisture well – a problem when working with moist soil, and they often get stiff, crinkly, and uncomfortable after a few uses. A sturdy pair of plastic or latex gloves, like those used for cleaning, are a much better choice. They protect against moisture, and cleaning is as simple as rinsing them off under a hose and hanging to dry.

Make bloom-times overlap. Plant both early and late blooming plants next to each other, so that you have flowers all season long. Shallow-rooted annuals can be planted around deep-planted spring bulbs – when the bulbs die down, the annuals will just be coming into flower. For each season, choose one outstanding plant to serve as the key flower. Plant in drifts throughout the bed, and fill in with secondary flowers.

If you have room, consider putting in a raised bed in your garden. A raised bed prevents soil compaction from people stepping on the soil. Raised beds also provide better drainage for your plants, allowing roots to breathe better. Another advantage is that you can control the soil quality better in a raised bed.

Recipe: coca-cola glazed kielbasa

Coca-Cola Glazed Kielbasa
1-2 tablespoons olive oil
1 red onion, thinly sliced
1 green bell pepper, thinly sliced
2 rosemary sprigs
1/3 cup honey
1 tablespoon yellow mustard seed
2 pounds Polish kielbasa sausage
1 (12 ounce) can Coca-Cola Classic
Rosemary sprigs for garnish

In a 5 1/2 quart Dutch oven over medium-high heat, heat the oil until hot. Add the onions, green bell pepper and two rosemary sprigs. Lower the heat to medium and cook until the onions are nearly translucent, about 3-5 minutes.

Stir in honey, mustard seed, and sausage. Pour the Coca-Cola over the sausage and bring to a boil. Reduce the heat to a simmer and cook, uncovered, until the liquid is absorbed and glazes the sausage. This will take about 30-40 minutes. Stir frequently to prevent the sausage from sticking.

Remove the rosemary sprigs from the Dutch oven and transfer the sausage slices to serving platter. Garnish with fresh rosemary sprigs.

Variation: Substitute red wine or dark beer for the Coca-Cola Classic; chorizo or andouille sausage for the kielbasa.

Wing Dings
These are a Texas specialty!

1 cup beer
1/4 cup unsulphured dark molasses
1/4 cup creamy peanut butter
1/4 cup Worcestershire sauce
1 1/2 tablespoons chili powder
Juice of 1 medium lime
1/2 teaspoon dry mustard
1/4 teaspoon aniseed, toasted and ground
1/4 teaspoon salt
1 1/2 dozen chicken wings

Preheat oven to 350 degrees F.

Grease a large baking pan or dish. Combine everything except the wings in a large, heavy pan. Simmer them over medium heat 15 to 20 minutes, until they have reduced to a thick sauce.

While the sauce simmers, prepare the chicken wings. With a butcher knife, remove the wing tips, then cut each wing in half at the joint. Add the wings to the sauce, and stir to coat them. Ladle the wings and the sauce into the baking dish. Bake for 25 minutes, then stir the wings in the sauce.

Turn the heat up to 425 degrees F and bake an additional 10 minutes, or until the sauce glazes the sings. Serve the wings hot with a ranch dressing, if desired.

Recipe: classic swiss cheese fondue

Classic Swiss Cheese Fondue
1 garlic clove, cut in half
2 cups dry white wine (Neuchatel, Rhine or Chablis)
1 pound Emmenthaler or Gruyere, or a mix, finely cut (not grated)
3 tablespoons cornstarch
3 tablespoons Kirsch or brandy
Salt
Black pepper
Pinch of nutmeg
2 loaves crusty French or Italian bread (baguettes)

Rub an earthenware casserole, chafing dish or fondue pot with cut garlic. Pour in wine and bring to a simmer over low heat. DO NOT BOIL. Gradually stir in cheese bits (grated cheese tends to lump). When melted, stir in cornstarch that has been dissolved in Kirsch. Add salt, pepper and nutmeg; stir and bring to a simmer. Keep cheese bubbling lightly over LOW heat or it will toughen. If it becomes too thick, add a little preheated wine. If it separates, add 1/2 teaspoon of cornstarch dissolved in a little wine, then warm slightly.

Serve with bread cubes that guests can spear on fondue forks, then dip into the cheese mixture. Serve a tossed salad on the side and offer fruit for dessert. Accompany with Kirsch, Neuchatel wine or beer.

5 Card Poker Shots

There is nothing like being young. And there is nothing like being young and bored on a Saturday night. Especially when you are in college, and get together with your buddies who are also bored on a Saturday night. That is usually a formula for life long memories that will be anything but boring!

When you are in college, it is pretty inevitable that you will find yourself strapped for cash. That’s not to say that you won’t still find yourself drinking, playing poker, or both! It’s funny how it works out that you will not have money to eat or play in a real cash poker game, but you will always find some liquor in the house. (Or will somehow scrape together enough money for a 12 pack of beer.)

During times of strife like this, my friends and I would play a game called 5 Card Poker Shots. The game involved no money, but did include shot glasses for each person. The rules of the game were very simple. Every one gets dealt 5 cards. You are allowed to trade up to 3 cards when it is your turn. Every one except the person with the winning hand has to do a shot.

I recall one night where vodka was the drink of choice as host Tommy had 2 bottles of it in his kitchen (or so we thought). My roommate Jimmy was with me that night, which always makes for an entertaining evening. Jimmy loves to play poker, but loves even more to drink. He is always the guy that you can find doing a keg stand or doing a beer bong. He is also the instigator of the group, known for calling you a pansy (along with all sorts of other names I will refrain from), if you can’t hold your liquor.

On this night, Tommy sat right next to Jimmy and said he would be pouring the drinks if someone else would deal. Little did I know that Jimmy was about to be taken for a ride. On the ensuing hand, the glasses were filled as Jimmy said “Drink up losers” and downed his shot. As everyone else drank, they all had a puzzled look on their face while Tommy made a face to all at the table except Jimmy. Jimmy also began blurting “I wonder which one of you pansies is going to puke first, sure won’t be me,” as he laughed and checked his cards.

Understanding the look that Tommy had secretly given us, everyone kept drinking and playing cards making small talk as the bottles began to empty. After an hour or so, Jimmy started to rock back in his chair making odd breathing noises as well as spitting. Halfway through his 15th shot or so he began to vomit all over himself complaining that he did not feel well. Stumbling over to the couch he passed out while Tommy got out a couple of pens and his digital camera.

You can pretty much put together what happened. Turns out Tommy had filled one of the bottles with water and had been pouring the vodka only in Jimmy’s glass. This night everyone knew which pansy was puking first.

INGREDIENTS:

4 Grapefruit
1 Pineapple
1/2 c Sugar (or more to taste)
Nutmeg
6 Oranges
1 pt Strawberries
Shredded coconut
1/2 c White or rose’ wine

PREPARATION:

Dice pinepple; cut grapefruit and oranges in sections. Wash berries and
remove stems; add to fruits. Add sugar and let steep for several hours in
refrigerator.
Before serving, add wine. Sprinkle with shredded coconut
and nutmeg.

The Sauce This makes enough for about 30 “wingettes”. Mix all the
ingredients in a small sauce pan over low heat until the margarine is
completely melted. Sti occasionally.

The Wings Fry the wings in a deep fryer set at 375 degrees F., using
vegetable or peanut oil. I fry 15 wings at a time for 12-15 minutes. Drain
the wings for wings have been fried, pour the sauce over them, cover the
bowl, and shake to completely coat the wings. They can be eaten now, or you
can put them o for a few minutes to get an extra-crispy coating. Serve with
