Recipe: nation ham stew with wonderful peppers and cilantro

Country Pork Stew with Dessert Peppers and also Cilantro

4 tablespoons olive oil, divided 2 teaspoons curry powder (to preference)

1 cup onion, sliced 1 tsp garlic, finely chopped

1 cup seeded and also chopped ripe tomatoes or drained, tinned diced tomatoes

1 mug red or yellow wonderful peppers or a combination, coarsely cut
1/2 teaspoon seeded, minced jalapeƱo or serrano chile (or to taste)

2 tbsps golden raisins

1 1/2 pounds country pork, cut into 1/2-inch dices

1 container of pale beer

3 tbsps fresh cilantro, chopped

Salt Freshly-ground black pepper

3 cups warm, prepared rice, made from 1 cup long grain rice

Warm 2 tbsps of olive oil as well as the curry in a big, heavy skillet over modest warm. Add the onions as well as garlic and cook until soft, but not brownish. Include tomatoes as well as cook for a minute or two. Stir in the wonderful peppers, chile and raisins. Lower warmth and also simmer for 5 minutes.

Include continuing to be olive oil to a different skillet and warmth over modest warm. Include pork as well as cook for 2 to 3 minutes to gently brown. Include beer; cover and simmer for 5 to 8 mins.

Add the pork and liquid to the vegetables and simmer for 5 to 7 minutes a lot more. Uncover, stir in cilantro and season to taste with salt and pepper. Serve come with by hot rice.
