Bill Pfeiffer’s Chili Death sentence

1 tbsp oregano 2 tbsps paprika 2 tbsps MSG 9 tbsps chili
powder 4 tbsps cumin
4 tablespoons beef bouillon (split second crushed)

2 coulds beer 2 cups water
4 pounds extra lean chuck(chili grind) 2 extra pounds added lean pork (chili grind)

1 pound extra lean chuck, reduced right into 1/4-inch cubes

2 big onions, carefully chopped 10 cloves garlic, finely chopped
1/2 mug oil or kidney suet

1 tsp mole(powdered)

1 tablespoon granulated sugar

1 tsp coriander 1 teaspoon hot pepper sauce

1(8 ounce) can tomato sauce

1 tablespoon Masa Harina

Salt to taste In a large pot, add oregano, paprika, MSG, chili powder, cumin, beef bouillon, beer and water. Allow simmer.

In a different frying pan, brown 1 1/2 extra pounds of meat in oil or suet until meat is light brown. Drain pipes and add to simmering spices. Continue browning meat in batches till all meat has actually been added.

Sauté finely cut onions in oil or suet. Contribute to flavors and meat mix. Add water as needed. Simmer 2 hrs. Include mole (MOE-lay), sugar, coriander, hot pepper sauce and also tomato sauce. Simmer 45 mins.

Dissolve Masa Harina in cozy water and also contribute to chili. Include salt to preference. Simmer Thirty Minutes.

Yields 14 to 18 servings.
