Dish: fried steak with beer sauce

Fried Steak with Beer Sauce (Hollandsche Biefstuk)
With this Flemish and also Dutch favorite, offer buttered potatoes with parsley.

1 (1 1/2 extra pound)beef boneless sirloin
steak, 1 inch thick

2 tbsps red wine vinegar
1/2 teaspoon
salt 1/4 teaspoon coarsely ground pepper
1 tbsp butter or margarine

2 tsps all-purpose flour

1/4 cup beer 1/4 cup water 1 teaspoon packed brownish sugar 1/8 teaspoon salt 1/8 teaspoon coarsely ground pepper 1/8 teaspoon dried rosemary fallen leaves, smashed
Chopped scallions (with tops)

Lower outer side of fat on beef diagonally at 1-inch periods to prevent curling (do not cut into lean). Place beef in nonreactive dish. Mix vinegar, 1/2 teaspoon salt and 1/4 teaspoon pepper; spoon over both sides of beef. Cover and also refrigerate, turning occasionally, at the very least 1 hour.

Heat butter over medium-high heat in 10-inch skillet up until hot. Add beef as well as chef up until wanted doneness, about 7 minutes on each side for tool. Remove from warm; eliminate beef to warm plate.

Mix flour into pan drippings. Mix in beer, water, brownish sugar, 1/8 teaspoon salt, 1/8 tsp pepper and also rosemary. Heat to boiling; lower heat. Prepare and stir 1 min. Put sauce over beef; spray with scallions.

Yields 4 or 5 servings.
